Filipino Food Recipe - Stuffed Crabs

Many Philippine cuisine recipes have been created out of the Filipino's love of food. Whereever you may visit in the Philippine, different servings of Philippine cuisine in a variety of colors and taste, are prepared on the dining table in every home.
Stuffed Crabs Ingredients
4 pieces crabs
1/2 cup chopped ham
1/2 cup chopped button mushrooms
flour for dredging
1 tablespoon cooking oil
3 cloves garlic, chopped
1 piece medium ginger, chopped
fresh or bottled aligue
1 1/2 cups coconut cream
1/4 cup stock
1 tablespoon paprika Bilbao
1 tablespoon cayenne pepper
2 tablespoons salt
1 table spoon ground pepper
2 tablespoon young alagao leaves, chopped or not
Cooking Instructions for Stuffed Crabs
Boil grabs in water. Remove the fresh or bottled shells and set aside both the meat and the shells
In a small bowl, mix together crabmeat, ham and mushrooms. Stuff into crab shells. Dredge in flour and flash-fry till golden brown. Set aside.
In another pan, saute garlic, onion, ginger, and aligue. Add coconut cream and stocks. Season with paprika Bilbao, cayenne pepper, salt and pepper. Let sauce simmer then add alagao leaves and crabs. Simmer to cook.
Cooking Tip: Alagao leaves add good herbal flavr to seafood in Filipino cuisine. Unfortunately, it is now rarely used, especially in urban areas.
