Filipino Food Recipe - Chicken Loaf

Chicken Loaf Ingredients
1 kilo ground chicken
2 tablespoons minced onion
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon sage
3 egg whites
1/2 teaspoon salt
1/2 teaspoon pepper
3 hard-boiled eggs
1/2 cup cooked julienned carrots
1/4 cup julienned red bell pepper
1/4 cup julienned celery
2 tablespoons butter
2 tablespoons flour
1/2 cup milk
Cooking Instructions for Chicken Loaf
In a bowl, combine ground chicken, onion, allspice, nutmeg, sage and egg whites. Mix well and season with salt and pepper.
Cover the hard-boiled eggs with the mixture and transfer to a loaf pan. Arrange carrots, red bell pepper and celery on top.
Steam for up 30 to 40 minutes or until done. Reserve the juice from the steamer.
In a pot, combine butter and flour. Cook, stirring until well-blended. Add the juice and milk. Season to taste.
Cooking Tip: If you want a slightly darker sauce, you may toast the flour lightly until it turns a very light beige before combining it with the butter.
