Filipino Food Recipe - Adobo de Campesino

Adobo de Campesino Ingredients
8 cloves garlic
3 tablespoons atsuete oil
2 1/2 cups pork, cut into 1/2 inch cubes
5 tablespoons vinegar
1/2 tablespoon salt
1/4 tablespoon pepper
3 tablespoons patis
1 cup sitaw (yard beans), boiled
Cooking Instructions for Adobo de Campesino
Saute garlic in atsuete oil until slightly brown.
Add pork and stir-fry until brown.
Add vinegar and simmer. Don't stir until vinegar boils and releases its acidic odor.
Add salt, pepper and patis and continue simmering over low heat until pork is tender.
Before serving, ladle the pork onto a serving dish. Stir-fry the sitaw in the pan before spooning on top of the pork.
Cooking Tip: This is a traditional adobo made by the Spanish friars during the Spanish colonial period. Try it with slivered and blurred winged beans or segadillas instead of yard beans.
